Poori masala/Kura is a famous Indian breakfast recipe. Potato curry is a popular side dish for poori. Boiled and mashed potatoes cooked with onions and spices. Poori Masala is an excellent side dish for pooris. This curry also goes well with chapatis and dosa too.
Ingredients for poori masala:
Potato : 3 medium size
Oil – 2 Tbsp
Mustard Seeds – 1/2 tsp
Cumin Seeds – 1/2 tsp
Urad Dal – 1/2 tbsp
Chana dal – 1/2 tbsp
Red chilies – 2
Green chilies – 8 or 9
Curry Leaves – few
Grated Ginger – 1Tbsp
Onion – 3 medium size
salt – to taste
Green peas – 1/4 cup(frozen)
Carrot – 1 small
Chickpea Flour – 1 tbsp
Coriander Leaves – 3 Tbsp
Turmeric Powder – 1/2 tsp
Water – 2 to 3 cups depends according to the thickness you like.
Procedure for poori masala :
Step 1 : In a wide deep pan, add oil, when hot, add mustard seeds, cumin seeds, urad dal, chana dal & red chilli whole.
Step 2 : When the dals slightly change color add turmeric powder, curry leaves, green chilies & grated ginger
Step 3 : Add Onions, salt, and cook till the onions are soft.
Step 4 : Add green peas and carrots. Cover and cook for five minutes till the carrots are soft
Step 5 : Add the mashed potatoes when the carrots are soft. Add 2 Cups water and simmer for 10 minutes
Step 6 : After 10 minutes of cooking, Prepare the chickpea paste by adding water to the chickpea flour
Step 7 : Add this chickpea paste into the boiling curry and mix well. Bring to a boil.
Step 8 : Garnish with coriander leaves
Step 9 : Serve hot with Poori, chapathi, roti.
